Chocolate Chip Banana Pancakes
Makes 16
- 2 ripe bananas
- 2 eggs
- 1 cup milk
- 1 1/4 cups self-rising flour, sifted
- 1/3 cup ground almonds
- 1 tablespoon sugar
- pinch of salt
- 1 cup chocolate chips
- butter, for frying
- 1/2 cup toasted slivered almonds
For the topping
- 2/3 cup heavy cream
- 1 tablespoon confectioners' sugar
To Prepare...
1. Mash the bananas in a bowl. Beat in the eggs and half the milk. Mix in the
flour, ground almonds, sugar, and salt. Add the remaining milk and the chocolate
chips.
2. Stir the mixture well until it makes a thick batter. Heat a chunk of butter
in a frying pan. Spoon the pancake mixture into the pan, allowing room for them
to spread. When the pancakes are browned underneath, flip them over to cook
the other side. Slide onto a plate and keep hot, as you continue to make more
crepes.
3. Make the topping. Pour the cream into a bowl. Add the confectioners' sugar,
to sweeten it slightly, and whip to soft peaks. Spoon the cream onto the pancakes
and decorate with slivered almonds. Serve immediately.
